Ingredients:

  • – 12 large egg whites (or substitute with 3 whole eggs)
  • – 1/2 cup reduced-fat cheddar cheese, shredded
  • – 1/2 cup diced onion
  • – 1/4 cup diced red pepper
  • – 1 tablespoon olive oil or cooking spray
  • – salt and pepper to taste

Instructions:

  1. preheat oven to 350 degrees F. Grease a 12-cup muffin tin with cooking spray or line with paper liners.
  2. In a large bowl, whisk together egg whites, cheese, onion and red pepper.
  3. Pour mixture into muffin cups.
  4. Bake for 15-20 minutes or until a toothpick comes out clean when inserted into the center of one of the muffins.
  5. Remove from oven and let cool for a few minutes before serving.
